The Opportunity


Viaggio is currently seeking an energetic, eager, and ambitious
Regional Chef to join our group of world-class chefs for three Viaggio locations.

The Regional Chef will be responsible for leading, motivating and engaging the culinary team to deliver the highest standard.

You will be working to ensure that the vision is expressed through menu offerings and level of service as well as assisting in the hiring, training and expectations of your kitchen team.


What You'll Do
Primary Responsibilities

  • Develop plans to grow restaurant revenue and profit while maintaining exceptional quality & experience.
  • Achieve annual KPIs/targets including wages and purchases.
  • Review monthly purchases (food & food supplies) cost analysis to achieve targets; complete regular COGs analysis of current menu.
  • Coach Managers to complete labour analysis against KPIs/targets on a weekly basis.
  • Share and monitor targets and KPIs/targets with store management.
  • Work with suppliers to gain access to the best pricing while maintaining topquality products.
  • Create and implement health and safety procedures and new policies and procedures to ensure all locations are running in accordance with health and safety laws.
Recipe Development / Innovation

  • Work with location chefs to develop new menu items that deliver an exceptional food experience.
  • Leverage market trends to create new innovations that can be successfully executed.
  • Build seasonal menus to build excitement.
People Management, Training and Development

  • Coach
    BOH Managers to complete labour analysis against KPIs/targets on a weekly basis.
  • Build and manage BOH hiring and training program including training materials.
  • Hire and train staff members for the back of house (BOH)
