Description
Plan, research & develop, implement, and improve menus and menu items on an
ongoing basis.

Develop and update all food inventory spreadsheets and liquor inventory
spreadsheets monthly.

Develop spreadsheets and update as necessary.

Works in conjunction with the purchasing department on the testing and
production of new menu items and new ingredients.

Stays abreast of food and beverage trends and menu development strategy of
competitors.

Manages critical paths, budgets, and restaurant communication.

Leads on-going analysis and tracking of brand, category, and market activity.

Assist with the development of overall category business objectives, strategies, and
programs.

Review all food order guides to ensure products and prices are correct and ensure
any price increases are justified.

Facilitate classroom training of new franchisees and corporate employees and
provide training seminars as required.

Supervise the systems (Specification and Systems Manual) and ensure that all
manuals are always up to date.

Produce regular reports (including food handling and sanitation) concentrating the
activity and quality standards of the Franchise units.

Ensure that all units complete new menu training with staff and that testing, specs,
server details are completed prior to launching new menus or menu items and
signed off.

Plans on problem units and problem areas of operations particularly kitchen
operations. Execute action plans within due dates.

Travelling from location to location to review kitchen operations, kitchen
cleanliness, specs followed, Obsidian standards are being adhered to.

Inventory control/entering etc. are being followed and food costs are in line.

Ensure that quality and quantity for all food, paper, and related items follow pre
- established purchase specification and levels.

Health and Safety Boards & Operations are updated, and standards are being met.

Kitchen organization, freezer, Cooler, Beer Cooler, and dry storage.

Kitchen Employee structure verification.

Assist in improving kitchen systems/operations.

Assist in menu development in all concepts.

Ensuring food cost actual/theoretical are minimized (waste control).

Monitor and report sales trends of core and promotional menu items.

Continually improve food costs and products.

Provide theoretical cost analysis for locations as required and prepare a system
wide Quarterly Theoretical Food Cost.

Ensure all products, prices, pack sizes, brands, item numbers and counts on
inventory and liquor inventory are updated monthly.

Conduct a detailed Kitchen Evaluation report and action plans to rectify any issues.

Produce and develop monthly velocity reports on random locations to ensure
proper food purchases and units are ordering authorized products.

Ensure that high quality food and exceptional guest service are always delivered in
a clean and pleasant atmosphere.

New store openings. Training and setting up store opening and training 2-3 weeks
at store when opens for business.

Always maintain a clean work area and ensure kitchen equipment is properly and
regularly maintained and constantly clean.

Train all new menu roll outs in stores.

Ensure compliance with corporately approved and prescribed products to
established par levels. Verifies the receiving and effectively manages.

Review and update order guides for all brands.

Work with vendors, suppliers and distributors as required by Obsidian Group Inc.

Assist in dealing with any shortages from vendors and distributors as required by
Obsidian Group Inc.


Salary:
$55,000.00-$70,000.00 per year
