Position Purpose
Reporting to the Chef of the Department the Cook seeks guidance for daily duties from Assistant Manager or Supervisor on shift.
Major Responsibilities
- Main line production of sauces, soups, stews and main entrees by implementing standard menu
- Preparation of meals for as few as two people to as many two thousand
- Prepare and cook special meals for clients as instructed by Manager of Food Services, Assistant Manager or Kitchen Supervisor
- Help train and teach hired staff and volunteers and FSTP participants
- Supervise and direct volunteers
- Assist with client service at counter
- Maintain an atmosphere of courtesy and respect towards clients, staff, volunteers and FSTP participants
- Assist in the training of participants in the FSTP
- Teach theory class to FSTP participants as needed
- Receive food services and other deliveries overseeing condition and handling of incoming goods
- Ensuring inventory is available for meals
- Preparing appropriate amount of food for the number of meals served, ensuring that every client is served a wellbalanced meal following the Canada Food Guide
- Make use of donated products by incorporating donations into meals where appropriate
- Prepare catering requests as instructed by Executive Chef & Manager of Food Services
- Follow daily instructions or seek guidance from Sous Chef & Assistant Manager or Kitchen Supervisor
- Other duties as required or assigned by management
Other Requirements
Education
- High School Diploma
- College Diploma in Culinary field or equivalent (6000hrs)
- Red Seal certification preferred
- Train the trainer or other training courses considered an asset
Experience
- Minimum of one year's experience as a cook
- Experience preparing meal alternatives in a nutritious manner following the Canada Food Guide
Qualifications
- Must possess basic mathematical skills to understand recipes, measurements, requisition amounts and portion sizes
- Proven ability to demonstrate culinary techniques, i.e. cutting, cooking principles, safety and sanitation
- HACCP, WHMIS and City of Ottawa Food Handlers Certification essential
- Ability to work independently and as part of a team
- Good oral and written communication skills
- Ability to multitask
- Ability to work in a very fast paced environment
- Ability to lift up to 50 lbs
- Must be a selfstarter with a sense of urgency
- Must be able to work with mínimal supervision
- Flexibility in work hours, including early mornings
- Valid G driver's license preferred
- Bilingualism(English/French) considered an asset
Working conditions
- High degree of physical activity involving: walking, standing, sitting, climbing stairs, bending, lifting, driving
- Ability to stand for long periods of time
- Ability to lift up to 50 lbs
- Ability to work flexible hours and schedule, weekends and holidays may be required, as well as mornings and evening
- Overtime as required
- Must be comfortable working in a challenging environment that has the potential for confrontation and/or exposure to violence
