We are seeking a talented and experienced individual to join our team as the full-time Lead Sushi Chef at Nobu Restaurant, Toronto.
Reporting directly to the Head Sushi Chef, you will play a vital role in supporting the sushi bar operations, driving culinary innovation, and ensuring the delivery of extraordinary sushi that exceed our guests' expectations.
As a key member of our culinary team, you will have the opportunity to showcase your talent, creativity, and leadership skills while contributing to the continued success of Nobu Restaurant.
Responsibilities:
- Support the Head Sushi Chef in overseeing the sushi bar operations, including menu development, food preparation, and team management.
- Collaborate closely with the Head Sushi Chef to develop and execute a dynamic sushi menu that reflects Nobu's signature style and commitment to excellence.
- Assist in training, mentoring, and supervising sushi bar colleagues, ensuring that they adhere to established standards of quality, presentation, and consistency.
- Lead by example in executing sushi preparation techniques, maintaining the highest standards of craftsmanship, and upholding Nobu's reputation for culinary excellence.
- Manage daily operations in the absence of the Head Sushi Chef, including inventory management, ordering, and kitchen sanitation.
- Foster a positive and collaborative work environment within the sushi kitchen team, promoting open communication, teamwork, and professional development.
- Assist with special events, private dining experiences, and culinary promotions as needed, ensuring seamless execution and guest satisfaction.
- Uphold health and safety standards and regulations in the sushi bar, ensuring compliance with food safety protocols and sanitation guidelines at all times.
Requirements:
- Proven experience as a sushi chef, with a minimum of three years of culinary leadership experience in a highvolume, finedining environment.
- Comprehensive knowledge of Japanese cuisine, particularly sushi and sashimi preparation techniques, fish sourcing, and flavor profiles.
- Strong leadership and management skills, with the ability to inspire and motivate a team to achieve culinary excellence.
- Excellent organizational and communication skills, with the ability to multitask and prioritize in a fastpaced kitchen environment.
- Food safety certification and knowledge of health and safety regulations.
- Flexibility to work evenings, weekends, and holidays as required.
