Job Summary:


How you will make an impact:

You will be responsible for running the sushi operations including preparing and presenting sushi and related food products to customers.


As a Sushi Chef, you will:

  • Cook and manage the entire process of making high quality sushi including cooking sushi rice, making rolls and sushi, temperature recording, cutting, and packaging for take-out and dine-in plate preparation
  • Create a rich sushi menu with various main ingredients and raw fish (for example, salmon, tuna, unagi.)
  • Select fresh fruits and vegetables to make highquality dishes (like avocado, mango and carrots.)
  • Add additional flavors to sushi rolls with ginger, rice vinegar, wasabi and soy sauce, when appropriate
  • Manage food prep activities, like boiling rice
  • Coordinate with wait staff to ensure proper cooking, considering special requests and food allergies
  • Prepare appetizers, soups and salads that are close to the philosophy of Japanese cuisine.
  • Monitor food stock and place orders, as needed
  • Recommend new, modern recipes, like sushi burgers
  • Maintain sanitation of all equipment, supplies and utensils within the work area; keep display equipment clean and free of debris during meal service to assure compliance with all sanitation, safety, production, and merchandising requirements

About you:


  • Demonstrate highlevel knife skills and specific skills associated with sushi prep, production, and presentation
  • Good knowledge of various sushi types and sushirolling techniques
  • Postsecondary education in culinary or related studies
  • You must have a valid Food Handler Certificate or provincial equivalent
  • Sushi making experience required
  • Strong customer service and communication skills
  • Able to work independently and as a part of a team
  • Able to stand on feet for an extended period of time
