    Job Description

    A First Cook (Pastry) position has become available in the Kitchen department. Reporting to the Executive Pastry Chef, you are an enthusiastic, organized, service oriented individual. This position requires flexibility and shift work, including early days, evenings and weekends

    Responsibilities

  • Ability to work independently with little supervision
  • Manage receiving, perform inventory, and order the necessary supplies in accordance with establishment specifications
  • Ability to be flexible under strict time frames
  • Recommend improvements in food preparation methods to obtain a better product
  • Excellent skill in researching current trends
  • Ability to work independently with little supervision
  • Review the daily production sheets and prepare necessary food items in accordance with standards in a timely and efficient fashion
  • Adhere to standardized recipes and specifications in order to maintain consistency and ensure all standards are met
  • Understands bakers percentages
  • Knowledge of mixing techniques (sponges, breads, and mousses).
  • Job Skills and Requirements

  • Previous experience in viennoiseries and all breakfast pastry production
  • Relevant Baking and Pastry certificate, or equivalent combination of education and experience
  • Minimum 3-4 years baking/pastry experience in a high volume production kitchen
  • Able to assist in special occasion cakes, special amenities, sugar work, assorted French pastries, confections and showpieces
  • Red seal certificate (journeyman's papers) or recognized international equivalent
  • As per the LiUNA Local 506 Collective Agreement, in order to maintain full-time status, once you have worked for a full calendar year, you will be required to have worked a minimum of 1,200 hours for that calendar year, and each subsequent calendar year, in order to maintain full-time status.
