- Understands bakers percentages
- Knowledge of mixing techniques (sponges, breads, and mousses).
- Previous experience in viennoiseries and all breakfast pastry production
- Relevant Baking and Pastry certificate, or equivalent combination of education and experience
- Minimum 3-4 years baking/pastry experience in a high volume production kitchen
- Able to assist in special occasion cakes, special amenities, sugar work, assorted French pastries, confections and showpieces
- Red seal certificate (journeyman's papers) or recognized international equivalent

A First Cook (Pastry) position has become available in the Kitchen department. Reporting to the Executive Pastry Chef, you are an enthusiastic, organized, service oriented individual. This position requires flexibility and shift work, including early days, evenings and weekends

As per the LiUNA Local 506 Collective Agreement, in order to maintain full-time status, once you have worked for a full calendar year, you will be required to have worked a minimum of 1,200 hours for that calendar year, and each subsequent calendar year, in order to maintain full-time status.
