What you'll do:

-
The Brass Tacks

  • Reports to on shift sous chef, executive chef
  • The AM cook is responsible for the production of menu items including: preparation, productions and presentation of menu items and will maintain a high standard of food quality and safety.
  • Executes meals to exceptional standards each day
  • Works with the line teams to produce high end product in a fast paced environment
  • Coordination with the prep teams to make sure par levels are being met
  • Operates kitchen equipment in a hygienic, safe and proper manner. It is the cooks responsibility to report to management when equipment is not performing to high standard
  • Cleans and sanitizes their station above and beyond the required standards
  • Ensures safety and hygiene practices/procedures are adhered to an assist in maintaining quality assurance standards that comply with all Health and Safety Standards and Regulations
  • Promotes and maintains positive communication and relationships among management, staff, guests and the public
  • Carries themselves with pride and positive attitude aligning with the company values
  • Ensures guests rights of privacy and confidentiality are maintained, except in the proper operation of the business
  • Perform other duties as required

The Nitty Gritty

  • Must be legally authorized to work in Canada
  • 25 years experience required, preferably in a fine dining, farm to table environment
  • Must have a high school diploma
  • Food Safe level 1 required
  • Must be able to lift 50 lbs
  • Strong team player, fast paced environment
  • Knowledge of local ingredients is a plus
  • Ability to stand or walk for 8 hours
  • Willingness to comply with all safety and sanitation guidelines
