Mary Macleod opened her artisan shortbread business over 40 years ago (1981), as the first "shortbread only" bakery in Canada.

Her success was assured when she began baking and selling her signature Chocolate Crunch shortbread cookies to the happy customers lined up outside her small shop in the heart of Toronto.

POSITION:
Speciality FoodsBaker (NOC 63202)


PURPOSE:

Specialty Foods Baker does the following: ingredients preparation, mixing, forming, baking, quality assurance, production schedule optimization, baking supplies purchasing, baking materials handling, specialty packaging/merchandising, training and supervising of baking personnel.


  • Preparation of ingredients for baking;
  • Preparation of doughs;
  • Cookie forming and decoration;
  • Baking according to production plans;
  • Recording data in production logs (manually or using software);
  • Preparation and maintenance of production area: washing pans, prep of kitchen equipment and small wares;
  • Preparing primary packaging and accents;
  • Packing product into containers, sealing containers, labeling containers
  • Operating and monitoring of production equipment ex: flow wrapper, scales, mixers, industrial ovens; dough portioner, sealers;
  • Accenting and packing orders;
  • Supervision of other staff or temporary staff, as may be required;
  • Follow procedures and work instructions to produce product that meets established company quality and standards;
  • Attending quality assurance meetings and training sessions as required;
  • Completing food safety and quality assurance logs as required;
  • Understand and follow food safety and quality assurance procedures;
  • Raise noncompliance issues;
  • Proactively contribute to continuous improvement of productivity, standards and quality controls.

SKILLS:


Required Skills and Experience:


  • Minimum 2 years' experience working in baking industry with strong quality assurance and food safety programs (BRC, SQF, FSSC or similar);
  • Experience in preparing, using and cleaning food manufacturing equipment (Note: Baking equipment and the ability to operate it is key to successful baking. Our ovens and mixers are complicated machines (Cinelli, Miwe, Hobart) requiring specialized knowledge to operate. We train all Bakers on ovens operations extensively;
  • Supervisory experience is an asset;
  • Food safety and / or quality assurance certifications or working knowledge of standards;
  • Experience in quality assurance and food safety functions;
  • Ability to communicate (written and oral) in English;
  • Ability to use MS Word and Excel;
  • Ability to use bakery production related software is an asset;
  • Excellent interpersonal and organizational skills, along with simple mathematical abilities;
  • Ability to understand and execute instructions accurately;
  • Ability to work independently with minimum supervision;
  • Flexibility to work days, nights, and weekends if needed;
  • Working knowledge of Good Manufacturing Practices (GMPs) and HACCP (Hazard Analysis and Critical Control Points);
  • Manual dexterity for forming, packing and accenting cookies;
  • Delivering 100% service level in all Baker functions;
  • Proven effectiveness at working as part of a diverse team;
  • Professional manner.

WORK ENVIRONMENT:


  • Ability to work and stand for long hours approximately three (3) consecutive hours of standing;
  • Ability to lift up to 25 lbs on a regular basis;
  • Manual dexterity for forming, packing and accenting cookies is required;
  • Temperatures that may be considered above "room temperature" and not to exceed 26C;
  • Intermittent loud sounds lasting approximately 20 minutes at a time throughout the day (compressor machinery). Ear protection is provided when on the loading dock;
  • Smells include butter, sugar, chocolate, maple syrup, nuts. Must be free from allergies to any of these products;
  • Flexibility to work days, nights, and weekends if needed (frequently happens September
  • December).

EDUCATION / TRAINING:


  • High School graduate or equivalent (GED) with College Degree;
  • Training or work experience in quality assurance and food safety programs is an asset;
  • Completion of the Food Handlers Certification Training is an asset.
