Under the direction of the Dietitian and Support Services Manager, the Cook prepares assigned food items by methods/procedures such as roasting, frying, grilling, steaming, poaching, boiling and baking


The Cook:

  • Prepares assigned food items by following established menus, recipes and quantity quotas. Assembles ingredients and equipment required for cooking and texture modification.
  • Plans preparation and cooking schedule modification to menus and recipes.
  • Cooks and seasons assigned food and therapeutic diet items such as soups, sauces, salads, starches, meats, fish, poultry, vegetables and desserts using methods and procedures such as roasting, frying, grilling, steaming, poaching, boning, baking and bulk rethermalization. Tests food items for palatability and temperature and adjusts accordingly.
  • Carves food items such as meat and poultry and controls portioning of food items to ensure recipe yield meets assigned quantity quotas.
  • Maintains established food rotations in storage in order to minimize spoilage and waste.
  • Delivers or ensures the delivery of food wagons to designated dining areas. Ensures defined portioning and delivery of meals and fluids is carried out by Food Service Workers.
  • Maintains and monitors food safety programs, and general safety in the kitchen area. Ensures safety practices and procedures are adhered to minimize safety hazards. Maintains HASAP program and monitors other Team Members to follow the same protocol.
  • Participates in the Audits and More Program. Performs audits for meat temperatures received, cooked and served. Assists with the quality assessment of food prepared and food waste audits.
  • Attends and actively participates in monthly dietary Team meetings.
  • Maintains personal professional development through exposure to relevant educational and literary resources and attendance at workshops, in services and Team meetings.
  • Maintains a current knowledge of and complies with all facility policies and procedures.
The Cook also on certain work days has supervisory responsibilities including:

  • Orders and receives supplies as required and resolves discrepancies with suppliers;
  • Supervises designated food services Team by scheduling and coordinating work assignments, evaluating Team performance and determining related training and orientation requirements.

Salary:
$26.76-$27.65 per hour

Expected hours: 37.5 per week
