The 1st/2nd cook GH Combo reports directly to the Chef.
Duties and Responsibilities
- Prepares food according to Chef's specification and recipes.
- Knows proper handling of food, equipment and utensils.
- Ensures attractive display of food items, showpieces, etc., on display counters, buffets or where required.
- Cleans and maintains his/her working place, store, equipment and utensils.
- Checks the sauces, meats, fishes, vegetables, fruits and all precooked and raw items to prevent spoilage.
- Checks the Kitchen/Dining RM before service begins: everything neat and tidy.
- Participates in the meal service.
- Follows and enforces the hygiene and safety standards
- Knows the fire and safety procedures and operation of kitchen.
- Supervises the general cleaning and proper handling of food leftovers.
- Perform any other duties as directed by the Chef.
- Cooking and food preparation in the kitchen to the established standards and to the satisfaction of the clients.
- Ensures that all food items prepared and served are according to established standards and practices.
- As needed, trains and guides kitchen personnel.
- Familiar with proper sanitation procedures and follows Public Health requirements.
- Works behind buffet, carving main dishes (hot or cold)
- Stores leftovers and surpluses in a manner to protect them from contamination
- If necessary, starts preparations for the following day.
- Checks and organises all fridges, freezers and storage areas.
- Performs other duties as directed by the Chef.
Qualifications
- Food Safe Certification
- Formal Training in Culinary Arts
- 2+ years' experience working in a kitchen setting
- 2+ years' experience working a rotational schedule in a seasonal remote camp environment
Excellent communication skills
Working Conditions
12 hour shift work, 3 weeks in and 1 week out rotational schedule, and being isolated for periods of time.
Physical Requirements
Requires standing for extended periods of time, lifting and carrying heavy objects (50+ pounds) on a regular basis, and performing repetitive tasks with few breaks.
Safety Responsibility
Attend and participate in daily Toolbox Meetings and weekly Safety Meetings
Report all incidents, near misses, injuries and property damage incidents to the supervisor immediately
Perform Fire Warden duties, as required

Experience:
- Cooking: 1 year (preferred)
Licence/Certification:
