    On the heels of fans first experiencing the newly renovated Rogers Centre Outfield District, the Toronto Blue Jays will be introducing three new premium clubs, opening during the season as part of the next phase of Rogers Centre renovations.

    The new premium clubs will be located beneath a completely reimagined lower bowl, connected to the best seats in the ballpark, with entertainment experiences. Each club offers a differentiated experience to satisfy unique fan interests, with personalized level of service including private members.

    THE ROLE

    The Executive Sous Chef Premium Clubs is responsible for directing and administering the planning, preparation, production and control of all culinary operations in the restaurant. The role reports to the Sr. Executive Chef of F&B at Rogers Centre.

    ESSENTIAL FUNCTIONS

  • Plan innovative and on trend menus, maintaining financial responsibility for the menu mix. Analyze menu and food costs and the preparation of cost and quality efficient menus
  • Work closely with Beverage Manager/Sommelier to develop beverage/wine and food menus that inspire our VIP Guests and enhance the guest experience
  • Prepare reports regarding food and menu analysis.
  • People and product focused hands-on management of day to day operations of the New Premium Club offerings
  • Implements and enforces all departmental and organizational policies and procedures. Assures staff compliance with all standards, policies and procedures.
  • Managing associates utilizing Sous Chefs and Lead Cooks through planning and scheduling of work assignments and performance development. Administers corrective counseling process, training and development, appraisals, payroll accountability.
  • Work with the Director of Premium Clubs to prepare annual budgets and ensure all fiscal responsibilities are met.
  • Oversee inventory management to assure all Clubs are adequately supplied at all times. Performs periodic inventory. Requisitioning and Purchasing. Maintains effective vendor relationships.
  • Oversees the sanitation standards of the kitchen to ensure compliance with local health department regulations and company standards.
  • Direct interaction with high level and VIP clients
  • Perform related duties as assigned by Leadership
  • QUALIFICATIONS

    To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.

  • The ideal team member will have a degree or certification from an accredited culinary arts institute, and Chef certification. At least five () years of experience as an executive sous chef in a high-end and or fine dining environment. Experience with high volume an asset.
  • Proven track record in improving kitchen efficiencies, quality, food and labor costs.
  • Must have excellent managerial, financial analysis, team building and communication skills/customer service.
  • Must have knowledge of kitchen sanitation, operation and maintenance of kitchen equipment.
  • Must be detail-oriented and extremely organized with the ability to learn new programs and procedures quickly.
  • Must be proficient in Microsoft Word, Excel, and PowerPoint.
  • Must be flexible to work extended hours due to business requirements including nights, weekends and holidays.
  • Must be open to providing incidental or short-term support to other facilities in the event of a business emergency.
  • Ability to travel to the US required
