Position Summary

  • The Cook is responsible for preparing assigned food items by methods/procedures such as roasting, frying, grilling, steaming, poaching, boiling, baking and prepreparation of food.
  • PRIMARY RESPONSIBILITIES:
  • Food Preparation:
  • Preparing assigned menu items for patients, cafeteria service, meals on wheels, and assigned special catering by following established menus, recipe and quantity quotas, determining ingredients and quantities required and assembling ingredients and equipment required for cooking.
  • Planning cooking schedule to minimize time between completion of cooking and serving. Ensuring all meat is taken out of freezer in sufficient time for meat to be safely thawed in the refrigerator for the next day's meal.
  • Cooking and seasoning assigned food and therapeutic diet items such as soups, sauces, salads, meats, fish, poultry, etc. by methods/procedures such as roasting, frying, grilling, steaming, poaching, boiling, and baking. Testing food items for palatability and temperature and adjusts accordingly.
  • Carving, cutting food items such as meat, poultry, casseroles, etc. and controls portioning of food items.
  • Maintaining established food rotations in storage in order to minimize spoilage and waste. Ensuring all prepared, uncooked and/or cooked food is covered, labelled, and dated properly.

Other Related Duties:

  • Unlock any refrigerators, freezers, main door and store room as appropriate.
  • Turning ovens, toasters, steamers, etc on/off each day as appropriate.
  • Ensuring hot food is set up prior to patient belt line and cafeteria service.
  • Operating all equipment in a safe manner, using protective guards as required. Reporting any broken down equipment or hazardous situation to the supervisor. Identifies needs for small wares and equipment.
  • Ensuring general clean up of all equipment. Ensuring soiled utensils, pots, pans, etc. are taken to pot wash area for cleaning and sanitizing.
  • Following established sanitation methods/procedures to ensure safe food supply (i.e. proper handling of raw/cooked foods, use of thermometer to test doneness, etc).
  • Participating in menu planning, making suggestions, ways to improve etc.
  • Participating in the evaluation/recommendation of new products and recipes.
  • Participating in the quality assurance program and staff meetings.
Performs other duties as may be assigned by program leadership


Qualifications:


  • Education
  • Grade twelve (12) Secondary School Diploma required.
  • Completion of an approved cook's course from a Community College and/or apprenticeship required. Equivalent of education and experience may be considered.

Experience:


  • Three (3) to five (5) years experience in quantity food production required.
  • Knowledge of operation of production equipment required.
  • Experience in an institutional food service environment preferred.
