Working with the Director of Finance, participate in the development, implementation and administration of all cost controls.

Oversees Check SCM (hotel procurement system) and train new colleagues in procedures, as required, including the preparation of sound financial information, analysis with the aim of maximizing value.

Order and source the best price for goods and supplies
Ensure correct tendering and compliance to Avendra terms and conditions, work closely with the Executive Chef to maximize high yielding items
Keep record of all saving initiatives
Oversee the Procurement Team and ensure compliance with local regulation and policy
Complete monthly Profit and Loss Analysis to review areas of opportunity
Support in the costing of unit food and beverage menus while overseeing menu entry and accuracy in the POS system
Responsible for daily Food and Beverage (F&B) ordering
Produce daily, weekly and monthly reports to ensure accurate monitoring of unit performance so unit management can take appropriate corrective action
Assist the Senior Management to control costs effectively
Work closely with the F&B team on menu engineering and identify items which need to be revised
Monitor Banquet Event profitability and inform Director of F&B of events who are not yielding profit
Work closely with Results Hospitality to ensure beverage loss is mitigated
Monitor the inventory process, including the ongoing maintenance of product par levels and order
guides, and conduct periodic audits for inventory accuracy and integrity.
Ensure sound inventory and product management practices in all assigned units
Monitor all dead/slow moving inventory and implement corrective actions
Undertake other ad hoc related responsibilities, as required.

  • Excellent verbal and written communication with 100% fluency in English, ability to write policies and technical correspondence related to the position and able to clearly communicate complex financial data amongst the management team in the hotel.

  • Perform a multitude of highly complex calculations.

Other Requirements:

Under-graduate or post-graduate degree in Accounting, Finance or equivalent.
Demonstrated knowledge of hotel accounting plus related programs and systems.
Previous Shangri-La Hotels and Resorts experience preferable.
Must be eligible to work in Canada
