What can I expect to do in this role?: In this role you will:

Provide team leadership within the cooking operation for the correctional institution
Provide direction and support to inmate helpers
Prepare and assemble meals
Maintain an inventory of supplies
Ensure the safety and security of helpers, staff and equipment
Maintain proper sanitary conditions in the kitchen area

How do I qualify?:

Mandatory Requirements:

Possession of Journeyman Chef's Certificate as issued by the Ministry of Training, Colleges and Universities OR sufficient acceptable experience in volume cooking
Valid First Aid and Heartsaver Certificate or the ability to obtain
Ability to work shift work, weekends, and holidays

Technical Knowledge:

You have practical, applied knowledge of:

Large volume cooking and baking principles
Standard cooking and food preparation
Food storage procedures and methods
Portion control standards and the proper use of kitchen equipment and tools
Food safety practices

Other Essential Skills:

Your skills and abilities include:

Team leadership skills to provide instruction to subordinate helpers
Communication skills, tact and diplomacy to work with ministry staff, inmate helpers and service providers
Analytical and problemsolving skills to identify and assess workplace hazards, equipment malfunctions and food service issues
Written communication skills to prepare various reports
Basic computer skills to input, track and record data
