Pastry Cook
Reporting to the Pastry Chef and Executive Chef, this leadership role is responsible to assist the Pastry Chef in the creation of breads, doughs, banquet and a-la-carte pastries and desserts for the hotel.
The Assistant Pastry Chef will take responsibility for the pastry and bakery section of the kitchen in the absence of the Pastry Chef.
Morning availability and a reliable transportation method are required for this position, given that the shift starts at 4AM.
Additionally, this position requires Sunday and Monday availability.
Responsibilities:
- Actively participate in menu development, quality control and product improvement
- Responsible for the daytoday operations of bakery and pastry station.
- Review the daily production sheets with the Pastry Chef/Sous Chef/Executive Chef
- Prepares and delegates the production of the necessary food items in accordance with standards
- Liaise with Front of House Manager as needed and answers telephone responding to questions when Pastry Chef/Sous Chef is not available
- Actively participates in training of pastry skills to junior staff and apprentices
- Adhere to standardized recipes and specifications in order to maintain consistency and ensure all standards are met
- Keep work station clean and organized including fridge's/freezers, countertops and stove tops
- Ensures that station opening and closing procedures are carried out to standard
- Keeps overproduction and food waste to a minimum, ensures proper rotation, labeling, and storing of food in order to reduce food cost expense
- Prepares lists of food products required for station for Pastry Chef/Sous Chef order and approval
- Other duties as assigned
Qualifications:
- Previous experience in the Pastry and baking required
- Leadership experience required
- Red Seal Certificate, Journeyman's papers or international equivalent preferred
- Diploma/Certification in a Pastry discipline an asset
- Computer literate in MS Office Suite
- Strong interpersonal and problemsolving abilities
- Highly responsible & reliable
- Ability to work well under pressure in a fastpaced environment
- Ability to work cohesively as part of a team
Physical Aspects of Position (include but are not limited to):
- Constant standing and walking throughout shift
- Frequent lifting and carrying up to 50 lbs
- Kneeling, pushing, pulling, lifting
- Ascending or descending ladders, stairs and ramps
