First Cook/ Second Cook
ROLE DUTIES & RESPONSIBILITIES (Include, but are not limited to the following:
Cooking Skills and Knowledge
- Responsible for preparing salads and fruit, cheese, and pickle trays on a daily basis. (2nd Cook)
- Assist the First Cook with meal preparation; wash, peel and cut vegetables. (2nd Cook)
- Set up the Rig Boxes for meals. (2nd Cook)
Organization and Cleanliness
- Responsible for washing all dishes, utensils, pots, and pans. (2nd Cook)
- Responsible for cleaning the dining area as well as coffee machines, milk dispensers, condiment racks, coolers, counter tops and sinks after each meal. (2nd Cook)
- Assisting the First Cook with obtaining and maintaining overall cleanliness of the Camp
EG:
cupboards, fridges, freezers, steam tables, chairs, can openers, storage rooms, etc. (2nd Cook)
- Assist in offloading, organizing, and storing grocery orders. (1st, 2nd Cook)
- Responsible for the quality of food and cleanliness of camp operations. (1st Cook)
- Accountable for maintaining proper inventory levels and menu preparation. (1st Cook)
- Responsible for cooking lunch and supper. (1st Cook)
Leadership Skills
- Professionally interact with the Client, Field Staff and Office Staff. (2nd Cook)
- Manage day to day food operations of the kitchen and dining areas. (1st Cook)
- Manage day to day camp operations of the dorms and common areas. (1st Cook)
- Menu planning and development. (1st Cook)
- Ability to deal directly with the Client as well as liaison with Operations and Office Staff. (1st Cook)
- Supervise all Camp Staff, including Night Cooks, Second Cooks, Camp Attendants, Kitchen Assistants and Camp Clerks. (1st Cook)
Paperwork and Reporting
- Mandatory reporting of all incidents/injuries per PCS Requirements. (2nd Cook)
- Ensure compliance with PCS Catering Policies and Procedures. (1st Cook)
- Complete grocery orders. (1st Cook)
ACCOUNTABILITY & DECISION MAKING
- Accountable for the daily and scheduled cleaning of the dishes, kitchen, and dining areas. (2nd Cook)
- Responsible for quality, selection and preparation of salads and trays, as well as filling rig boxes. (2nd Cook)
- Responsible for direct supervision of all Camp Staff. (1st Cook)
- Responsible for the quality of food, cooking, and cleanliness of all camp locations. (1st Cook)
EDUCATION & EXPERIENCE
- Related experience in a fastpaced food service environment. (2nd Cook)
- Food Safe Certificate is an asset. (1st Cook, 2nd Cook)
- First Aid Certificate is an asset. (1st Cook, 2nd Cook)
- Red Seal Chef Certificate or equivalent years of experience. (1st Cook)
- Related management experience in a fastpaced food service environment. (1st Cook)
SKILLS & COMPETENCIES
- General knowledge of food and catering with a focus on quality, production, sanitation, inventory controls and presentation. (2nd Cook)
- Capable of working in remote locations. (1st Cook, 2nd Cook)
- Comprehensive knowledge of food and catering with a focus on quality, production, sanitation, inventory controls and presentation. (1st Cook)
- Strong supervisory skills, capable of motivating, leading, and developing staff. (1st Cook)
Camp Attendant
ROLE DUTIES & RESPONSIBILITIES (Include, but are not limited to the following:
Organization and Cleanliness
- Properly dispose of any garbage within the camp on a daily or when asked basis.
- Thoroughly clean the bedrooms, washrooms, common areas, hallways, windows, walls and floors of the camp.
- When necessary, professionally clean the carpets and wax the floors.
- Change linens in camp on a weekly basis; when crews change, or more frequently if needed.
- Wash kitchen and bathroom laundry, separately, as required.
- Clean and organize storage areas and laundry rooms.
- Maintain inventory levels of towels, bedding, cleaning supplies, detergents, etc.
- Ensure that fire alarms and extinguishers as well as exit lights and signs are safely and properly working.
- Assist in offloading, organizing and storing grocery orders.
Leadership Skills
- Professionally interact with the Client, Field Staff and Office Staff.
Paperwork and Reporting
- Mandatory reporting of all incidents/injuries per PCS Requirements.
- Proper completion of forms (Weekly Fire Safety Maintenance Duties and Weekly Fire Alarm Inspection Log and Fire Drills).
ACCOUNTABILITY & DECISION MAKING
- Responsible for the daily and scheduled cleaning of overall camp area and assisting in the kitchen areas as required.
EDUCATION & EXPERIENCE
- Previous janitorial experience, preferably in a remote camp environment.
SKILLS & COMPETENCIES
- Ability to work independently as well as in a fast paced team environment.
- Attention to detail and initiative to maintain a clean camp environment.
- Capable of working in remote locations.
