Description

The objectives of this project are:1) Identify all the peptide sequences of the porcine cruor hydrolysate studied by HPLC-MS/MS-QTof;

2) Evaluate the potential of the porcine cruor hydrolysate to slow down the development of the spoilage flora of pieces of pork loin and to preserve their physico-chemical properties (odor, color, pH, texture, water retention) when stored at 4°C.

Other tasks associated with the position:1) Follow-up of students from both cycles in relation to the theme of slaughterhouse blood;
2) Assistance with the writing and correction of scientific articles;
3) Writing of scientific articles and presentation at congresses.

Position Requirements:

Successful completion of a PhD in a scientific domain (Food Sciences or Microbiology) from an accredited higher education institution within the last three years;
Strong interest in a career in applied research and technology development;
Knowledge and experience in microbiology would be highly appreciated;
Critical scientific mind;
Aptitude for scientific writing;
Knowledge in bioinformatics would be highly appreciated;
Strong French and English language and writing communication skills.

The position is full-time (100%) under the direction of Dr Laurent Bazinet and placed at the department of Food Sciences, Université Laval (Québec, Canada) for a duration of 6 months (renewable for at least 2 years).

Salary of 48 000$ CAD/year (including social benefits).
