THE OPPORTUNITY
Published On Main is currently searching for a passionate individual to join our growing team as
Chef de Partie.

START DATE:
Immediately

This position is FULL TIME


POSITION OVERVIEW
As a CDP, you will play a vital role in the culinary operations at Published On Main.

You will be responsible for specific a section or station in the kitchen, ensuring cleanliness and organization, preparing high-quality dishes, maintaining food safety, standards, and contributing to the overall guest experience.

Additionally, you will collaborate with the kitchen team and support the direction set by the senior chefs.


Station Management:


  • Take full responsibility for the operation of a specific station within the kitchen, such as sauté, grill, fry, etc.
  • Ensure all dishes from the station are prepared with excellence and served at the correct temperature and standard.

Preparation and Cooking:


  • Prepare and cook dishes according to the restaurant's menu and standards.
  • Develop new dishes and contribute ideas for menu enhancement in collaboration with the Head Chef and Sous Chef.

Quality Control:


  • Conduct taste tests and adjust seasoning and presentation as needed.
  • Ensure dishes meet the restaurant's portion size, appearance, and taste standards.

Team Support:


  • Supervise and support junior kitchen staff, ensuring efficient operation within the kitchen.
  • Provide training and guidance to junior staff on cooking techniques and dish presentation.

Inventory and Stock Management:


  • Manage the inventory of ingredients for their section, placing orders as necessary to ensure stock levels are maintained without excess.
  • Conduct regular checks to ensure food supplies are fresh and of high quality.

Cleaning and Maintenance:


  • Maintain cleanliness and organization within the section, adhering to health and sanitation regulations.
  • Ensure all equipment in the section is properly maintained and functioning.

Compliance with Standards:


  • Follow recipes, portion controls, and presentation specifications as set by the restaurant.
  • Adhere to food safety and handling policies and procedures across all areas of food production.

Collaboration and Communication:


  • Work collaboratively with other sections to ensure timely preparation and delivery of dishes.
  • Communicate effectively with the Sous Chef and Head Chef, providing updates and raising concerns as needed.

Continuous Improvement:


  • Stay informed about current culinary trends and techniques.
  • Participate in training and development opportunities to enhance skills and knowledge.

  • 35+ years prior experience working in a high caliber kitchen and a solid understanding of the expectations and standards associated with these establishments, including attention to detail, presentation, and highquality food production.
  • The ability to work under pressure, efficiently maintaining quality in a fastpaced and demanding environment, especially during peak hours.
  • A good understanding of the restaurant's menu, including the ingredients, flavour profiles, and cooking techniques often used and the skill to execute dishes and recipes accurately.
  • A keen eye for detail, ensuring that every menu item or dish component they work on meets the highest standards.
  • The confidence to adapt quickly, think on their feet, and handle unexpected situations such as changing menu items, lastminute requests, or special dietary restrictions.
  • Effective communication and teamwork skills and the ability to collaborate with team members, and work harmoniously in a fastpaced, highstress environment.
