Raspberry Rica Ice Cream
In one of my last blogs I showed readers how to make homemade ice cream via a cheat method that produces the most delicious ice cream you've ever had. @Javier 🐝 CR loves raspberry sorbet, so I came up with the idea to make an ice cream in his honor. I named this ice cream Raspberry Rica.
Ever since I came up with the idea, I've been dying to make it. Chambord is an expensive raspberry liqueur that would work really well, but I decided to go with a more frugal version. Sorry, Javi. You're worthy of the best, but alcohol is very expensive in Canada. This version is surely even more delicious, and that's what's most important, right?
Here's how I did it.
Use one can of sweetened condensed milk.
1½ cups of frozen raspberries.
2 cups of 35% cream
1½ shots of Cassis
½ shot of Raspberry Sour Puss Liqueur
Cook the raspberries in a bowl in the microwave for about 2 minutes.
Put the raspberries and the alcohol into the sweetened condensed milk and mix up well.
In a separate bowl, mix your cream until it has a sloppy texture.
Add the two mixtures together and whip some more. Keep the consistency thick but not as firm as
regular whipped cream.
Pour the entire mixture into a freezable dish and garnish with frozen raspberries and shaved chocolate.
Put in the freezer for six to eight hours and enjoy!
I'm anticipating eating a very a delicious dessert later this evening.
