About the Role:


Tonic Bar and Tonic House at Sweat and Tonic are an integral part of our mission to bring the best of fitness and wellness to Canada.

We are seeking a leader that understands the vision, provides the strategic direction and drives a team to execute the operation at the highest level.

Launched in October 2023, Tonic Bar already serves up to 4,000 guests per week across two locations.

Primary Job Responsibilities:


  • Provide senior leadership for three F&B outlets: Tonic Bar is our smoothie, coffee, grabandgo and cocktail concept operating at our Yonge / Shuter and Front / Spadina locations. Tonic House is our workspace at Front / Spadina where we offer the full Tonic Bar menu delivered by a Tonic House attendant alongside a cocktail and snack menu served into the night.
  • Take ownership of the three F&B revenue streams and operate the businesses to deliver monthly revenue growth and profitability
  • Provide the short and long term strategic vision for Tonic Bar and Tonic House
  • Appropriately manage time to dedicate resources to Tonic Bar and Tonic House, including spending regular time after hours to ensure success of Tonic House's cocktail bar. Take the time to understand all operational challenges, including opening and closing the facility and the role of the prep kitchen.
  • Develop the long term concept and menu for Tonic House at The Well which plays into the unique seasonal opportunities of the space. Develop attractions within the space including live DJ, menu specials, short and longer term brand partnerships.
  • Train, develop, and manage a team of two locationspecific managers to provide the handson, daytoday leadership and execution of the vision
  • Provide daily onsite leadership presence, actively engage with the team, provide timely feedback, constantly reinforcing service and location standards
  • Work closely with marketing to proactively plan the promotional calendar and menu releases to drive sales at all outlets
  • Tweak all menus quarterly to meet seasonal demand and drive sales
  • Develop supplier relationships and partnerships to include whitelabeled menu items for a product offering that is unique to Sweat and Tonic
  • Manage operational and capital expense budgets including equipment procurement, maintenance, labor costs and provide strategic recommendations for longerterm investments
  • Manage inventory through daily inventory counts and provide accurate COGs data through the monthly opening and closing inventory counts
  • Find and drive efficiencies from the multiunit model using Yonge / Shuter as the prep engine and ensure adequate food and packaging inventory at all times in both locations
  • Develop and deliver bestinclass onboarding and training delivered through a learning management system
  • Develop and enforce consistent brand merchandising standards across all locations
  • Develop a system for frequent product, service and merchandising audits
  • Drive sales through an engaged service team who are appropriately trained to educate guests about the menu
  • Develop strategies and initiatives to incrementally improve performance in a timely manner
  • Work crossfunctionally with Corporate Sales and Events Manager to ensure product and staff availability for oneoff events and brand partnerships
  • Work closely with studio managers to ensure basics of training are covered for all front desk staff to find scheduling efficiencies
