Duties:

Develop naturally occurred polysaccharides/hydrocolloids and non-gluten proteins (pulses) conjugates for replacing glutens in breads making.

Education:


Currently enrolled or will be enrolled by the date of appointment in a PhD program at the University of Guelph with specialization in Food Chemistry (cereal science).

Degree equivalency


Experience:

Experience* in gluten free baking and development of related formulations.

Experience* in peer review publications as a co-author.

Experience* in starch analysis.

  • In the context of student recruitment in the Federal Public Service, the experience can be acquired through studies, work experience, or volunteer activities.

Information on language requirements


Knowledge:
Knowledge of cereal chemistry including hydrocolloids and gluten structure and functionality.

Abilities:
Ability to carry out experiments with minimum supervision.
Ability to use analytical instruments in carbohydrate laboratory.

Operational Requirements:
Able to occasionally lift weight (25 LB) for operation of centrifuges and move gas cylinders.
