Position Overview
As a Product Development Chef with Scarlett House Food Group, reporting into the Sr.
Product Development Chef, you will be key in creating new and exciting food products for a variety of market segments including airline catering, retail, and healthcare.
You will be required to continuously research new food trends, products in the marketplace, creating new recipe concepts including:Conducting testing and sampling for new and current products.
Collaborating with our production teams to develop and engineer fresh / frozen / retherm recipe concepts.
Work closely with our food costing analysts and Q/A teams.
You will also work closely with our sales teams and collaborate on providing creative and unique recipe concepts for proposals as requested.
Duties and Responsibilities
- Assist Sr. Product Development Chef with regular reformulation of products for improvement, enhancement and/or cost reduction.
- Perform nutritional analysis for the product developed to ensure that it meets all the required specifications.
- Aid in sourcing new product from various suppliers and evaluate the newly sourced product.
- Coordinate and execute product tastings, recipe reevaluations, client sampling.
- Monitor opportunities and competition to identify and enhance our competitive advantage
- Organize and maintain proper condition of development department equipment kitchen, office and storage areas.
- Innovates, develops and proposes new, trenddriven menu items.
- Maintains detailed, accurate cost worksheets.
- Researches and utilizes new and trending packaging products.
- Works with the Purchasing Team to maintain detailed product specifications for all manufactured items.
- Assists in developing and maintains label templates for all manufactured items.
- Assists Sr. Product Development Chef in conducting shelf life testing in conjunction with FSQA Manager.
- Assists Sr. Product Development Chef in site visits and compliance audits to evaluate products during manufacture and after delivery
- Assists in the development of recipes, formulas, procedures, stepbystep assembly instructions and CCP requirements.
- Continually research new products, methods and trends; attend industry events and trade shows.
- Other duties as assigned.
Requirements:
- 3 years of product development and or culinary restaurant experience.
- Post graduate certification from a culinary management school.
- Well versed in regulatory requirements such as GMP, SQF, BRC, HACCP.
- Demonstrated professional culinary presentation skills.
- Exceptional customer service skills.
- Computer knowledge; MS Office, Excel.
- Excellent written and verbal communication skills.
- Problem solver and analytically minded.
- Knowledge of industry trends, consumer insights, and competitive business strategy.
- Requires adaptability to handle multiple projects simultaneously while addressing aggressive timetables for completion.
- Some domestic and international travel will be required; access to a vehicle would be beneficial.
Working Condition/Physical Requirements
- Able to work in hot and humid kitchen environment
- Long periods of standing, bending, reaching, stooping
- Lifting, pushing, and pulling weight up to 30 or more pounds
Job Types:
Full-time, Permanent
Salary:
$60,000.00-$70,000.00 per year
