Les responsables cuisine planifient et dirigent les activités reliées à la préparation et à la cuisson des mets et occupent les mêmes fonctions que les cuisiniers.
Fonctions principales
Planifier et diriger les activités reliées à la préparation et à la cuisson des aliments;S'assurer que la qualité des aliments est conforme aux normes;Évaluer les besoins et les coûts des aliments;Évaluer les besoins et les coûts de la main-d'oeuvre;Surveiller les activités des cuisiniers et personnel de la cuisine;S'assurer de maintenir une bonne ambiance de travail;Recruter et embaucher le personnel avec l'accord du gérant ou du franchisé;Expliquer les nouvelles recettes et le nouvel équipement au personnel de cuisine;Commander des aliments, des fournitures et du matériel de cuisine;Enseigner aux cuisiniers à préparer, faire cuire, garnir et présenter les aliments;Exécuter toutes autres tâches demandées par le gérant ou le franchisé.
Compétences et qualifications
Quelques années d'études peuvent être exigées. Ce type d'emploi exige 1 à 2 années d'expérience comme cuisinier ou chef d'équipe cuisine. Une compréhension rapide des données, un esprit analytique, une aisance avec les chiffres et la capacité de prendre des décisions sont exigés. Un esprit d'équipe, un sens de la collaboration, du leadership et une qualité de la communication orale sont exigés. La confiance en soi, l'intégrité, la résistance au stress, le dynamisme, l'énergie, l'autonomie,l'initiative, la disponibilité, la flexibilité et le sens de la qualité et de l'organisation sont exigés.
Conditions de travail
Les horaires de travail sont généralement fixes, le temps supplémentaire occasionnel. Travail fréquent en soirée, les fins de semaines et les jours fériés. Travail de nuit occasionnel. Travail intensif aux heures de repas. Travail de bureau occasionnel.
