- Reviews daily requirements & delegates duties to ensure the consistency in the preparation and execution of all food items according to the hotel recipes and standards. Ensure we are producing and serving the highest possible product to our guests and colleagues.
- Supporting menu and recipe development for all kitchen areas, to ensure all offerings are current and on top of food trends.
- Input orders through Birchstreet system to ensure proper food levels and food cost is maintained within budget guidelines.
- Creates a strong communication and coaching culture by actively participates in training of culinary & stewarding colleagues and conducts daily shift briefings.
- Maintains a safe and clean work environment and ensures that all Health & Safety standards are met, procedures followed and has the knowledge and tools to work safely.
- Maintain awareness of and ensuring compliance with all food safety & hygiene policies and procedures (as outlined by the EHC manual) are followed at all times.
- Maintain awareness of and ensuring compliance with all sustainability and food waste reduction/diversion policies, procedures and programs at the hotel.
- Promoting teamwork between the kitchen and all other departments, especially food and beverage service colleagues & leaders.
- Consistently offer professional, friendly and proactive service to all our guest and colleagues.
- Communicates effectively, both verbally and in writing, to provide clear direction to all hotel colleagues & leaders.
- Red Seal Journeyperson certification or international equivalent required
- 4 years of kitchen management experience, preferably in Hotel operation
- Food Safe certification required
- Able to work in a fast-paced, high-volume Kitchen
- Awareness of new trends in presentation and preparation of food
- Strong leadership and organizational skills
- Comfortable working with guests in a public areas
