    Sommaire du poste

    Superviser la préparation des aliments pour le petit déjeuner, le déjeuner et le dîner par commande d'invité ou tel qu'assigné par la direction de la cuisine conformément aux exigences de production et aux normes de qualité tout en maintenant un environnement de travail sécuritaire et hygiénique.

    Responsabilités principales

  • Participe à la préparation d'aliments selon les commandes d'invités de qualité constante suivant les cartes de recettes, ainsi que les normes de production, de portion et de présentation;
  • Mise en place complète et mise en place de la station pour le petit déjeuner, le déjeuner et/ou le dîner;
  • Démarrer les aliments préparés à l'avance, en s'assurant de ne pas se préparer au-delà des besoins estimés;
  • Former, motiver, recommander la discipline et superviser le travail des employés de cuisine en veillant à ce que toutes les normes culturelles et fondamentales soient respectées;
  • Utiliser, entretenir et nettoyer correctement l'équipement de cuisine, y compris la friteuse, le grill, le poêle, le cuiseur à vapeur, le robot culinaire, le mélangeur, le trancheur, le four, la table à vapeur, la bouilloire inclinée, le fer à gaufres et le gril à dessus plat;
  • Dater tous les contenants d'aliments et tourner selon les politiques, en s'assurant que tous les denrées périssables sont conservés à des températures appropriées;
  • Vérifier l'utilisation par quarts, déterminez la préparation nécessaire, l'attraction du congélateur et la mise en place de la ligne; noter tout article en rupture de stock ou toute pénurie possible; retourner tous les aliments qui ne sont pas utilisés dans les aires d'entreposage désignées, en s'assurant de couvrir ou de dater toutes les denrées périssables;
  • Aider à établir des plans et des mesures pour corriger tout problème de coût alimentaire; contrôler le gaspillage alimentaire, la perte et l'utilisation par police;
  • Se conformer aux règles de travail et aux normes de conduite de catégorie 1 et de catégorie 2 de Four Seasons énoncées dans EmPact;
  • Travailler harmonieusement et professionnellement avec des collègues et des superviseurs;
  • Aider au travail de préparation des légumes et des condiments au besoin pour le prochain quart de travail;
  • Exécuter toute autre tâche désignée.
  • Qualifications et compétencessouhaitées

  • La certification MAPAQ est requise pour tout poste en cuisine;
  • Bonnes aptitudes à la communication et à l'écriture en Français et en anglais;
  • L'école de cuisine ou l'enseignement d'institut culinaire ou l'expérience équivalente ;
  • Une expérience de travail culinaire ou connexe d'au moins cinq ans;
  • Des connaissances culinaires avancées sont attendues pour ce poste;
  • L'expérience antérieure en supervision est privilégiée;
  • Les connaissances de travail sont généralement acquises sur le tas;
  • Capacité de faire fonctionner, entretenir et nettoyer correctement la friteuse, le gril, le poêle, le cuiseur à vapeur, le robot culinaire, le mélangeur, le trancheur, le four, la table à vapeur, la bouilloire inclinée, le fer à gaufres, le gril à dessus plat;
  • Compétences en couteaux compétents et capacité à accomplir plusieurs tâches;
  • Déplacez-vous dans les installations et restez debout pendant de longues périodes;
  • Doit être disponible pour les jours de travail, les nuits et les fins de semaine au besoin.

We are looking for a person who has a strong work ethic, a high level of integrity, a concern for quality, a cultural sensitivity and a sense of customer service.

    Job description

    Supervise and oversee the preparation of breakfast, lunch, and dinner food items per guest orders or as assigned by kitchen management in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.

    Core Responsibilities:

  • Participates in the preparation of food items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards;
  • Complete miseen place and set-up station for breakfast, lunch, and/or dinner service;
  • Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs;
  • Train, motivate, recommend discipline, and supervise the work of kitchen employees ensuring that all cultural and core standards are met;
  • Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill;
  • Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures;
  • Check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables;
  • Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies;
  • Comply with Four Seasons' Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact;
  • Work harmoniously and professionally with co-workers and supervisors;
  • Assist in prep work of vegetables and condiments as required for the next shift;
  • Execute any other designated task.
  • Required Skills

  • MAPAQ certification is required for all kitchen positions;
  • Good communication and written skills in both French and English;
  • Cooking school or culinary institute education or equivalent experience;
  • Minimum five years culinary or related work experience;
  • Advanced culinary knowledge is expected for this position;
  • Previous supervisory experience is preferred;
  • Working knowledge is generally learned on-the-job;
  • Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill;
  • Proficient knife skills and ability to multi-task;
  • Move about facility and stand for long periods of time;
  • Must be available to work days, nights, and weekends as required.
